Iced Tea Recipe


Ingredients:
1 tall glass
1 cup water
1 tsp tea powder
5 tsp sugar
1 lemon's juice
10-15 ice cubes


Method:
Make black tea as usual with 5 tsp sugar
Take the tall glass and fill it more than 1/2 with ice cubes
Cool the black tea till only a bit warm
Pour the lemon juice over the ice cubes and also the black tea
Garnish with whole pudina leaves(1-2) and a lemon slice


Note:
The tea powder, sugar, lime , etc can be taken in qts as per your taste
 Ingredients required are for 1 glass of iced tea.

Indian Masala Tea Recipe


Method:
Take 1 cup water put to heat. Add 1 1/2 tsp. sugar, 1/4 tsp. chai masala (refer below)
2 pinches cardamom powder, 1 full tsp. CTC leaf tea. Allow to simmer till aroma exudes.
Add 1 cup milk, bring back to boil. Allow to simmer for 2 minutes.
Cover and take off heat. Keep aside for 2 minutes. Strain and serve piping hot.


For Chai masala:
1 cup dried ginger root, 1/2 cup elaichi pods (green cardamom),
1 tbsp. peppercorns, 6-7 2" sticks cinnamon.
Grind all the mixture together into powder.

Fruit Tea Recipe


Ingredients:
2 tsp Assam tea
2 cups hot water
2 tsp sugar
Juice of half a lemon
Fresh mint to garnish

For mixed fruits
2-3 pieces of peach and pineapple
2 -3 cherries


Method:
Brew the tea in hot water for 5 to 6 minutes. Strain and let it cool.
Now pour it in a grinder and add sugar, mixed fruits and lemon juice.
Take a glass, top it up with ice.
Pour in the tea and serve garnished with fresh mint.

Basil Tea Recipe


Ingredients:
1/2 cup Basil Leaves (Tulsi Leaves)
21/4th cup Water
2 tsp Tea Leaves or 2 Tea Bags
To taste Sugar
As needed Milk


Method:
1. In a small tea pan bring water and basil leaves to boil.
2. Lower the heat and allow to brew for 3-4 minutes.
3. Now add the tea leaves or tea bags and sugar as per taste.
4. Bring to boil.
5. Turn off the heat and strain it into cups and add milk as per your taste.

Kashmiri Chai Recipe


Ingredients:
4 Cups of Water
3 tsp of Green Tea
1 tsp Cloves 2 tsp Ground Cinnamon
7 tsp Cardamom
15 ml Ground Almonds


Method:
In 4 cups of cold water, boil three teaspoons green tea.
When the liquid turns green (5-10 minutes), add 1 tsp ground cloves, 2 tsp ground cinnamon, 7 tsp ground cardamom and 15ml ground almond and simmer for 5 minutes.
Strain, add sugar to taste (no milk) and serve with almond flakes.

Spicy Tea Recipe


Ingredients:
3-4 Tea Spoons/4 Teabags of good tea
A chunk of dry ginger (or fresh ginger if dry isn't handy)
3-4 cardmom pods, crushed (See Note below)
3 Cloves
Small piece of Cinnamon
A tsp of Somph
1 or 2 whole black peppers (optional)
Sugar to taste
Milk


Method:
Bring 2 cups of water to boil.
Add all the ingredients and boil again for about 15 seconds.
Let stand for a minute.
Warm milk in a pot.
Filter tea into cups.
Add milk and sugar and Enjoy.

If you don't like to spend much time, mix all the spices and coarsley grind them. Boil water and add tea and a tsp of this ground spices. Rest is as above.

Note :
Since cardmom is expensive, so peel them and add the skin to my stock of tea leaves. This gives a distinct aroma. Of course you boil the skin with water.

Ginger Tea Recipe


Ingredients:
Ginger - 1 one inch piece, peeled and crushed
Water - 1 1/2 cups
Lemon Juice - 1/2 tsp
Honey - 1 tsp or as per taste


Method:
1. Bring the water to a boil over medium heat.
2. Reduce heat and allow it to simmer.
3. Add ginger and cover the pan.
4. Boil for 6 to 8 minutes.
5. Strain the water.
6. Add lemon juice and honey.
7. Serve hot.

Masala Chai Recipe


Masala mixture
    * 100 grams powdered ginger
    * 25 grams cloves
    * 100 grams whole black peppercorns
    * 60 grams cinnamon, broken small, or 40 grams ground
    * 1/2 nutmeg, crushed
    * 35 grams green cardamom pods


Procedure:
Combine all of the spices and blend well in an electric grinder. You only need a small quantity for each cup of chai; store the rest for later. A full recipe will keep you stocked full of chai for months.


Chai:

Ingredients (per cup)

    * 1/2 cup water
    * 1 1/2 teaspoon sugar
    * 3/4 teaspoon dried tea leaves - to be traditional, a strong Indian tea such as an Assam is best.
    * pinch of masala mixture
    * 1/2 cup milk


Procedure :

1. Boil water and milk.
   2. Add sugar, tea leaves and masala until the mixture becomes dark (about 5-10 minutes).
   3. The longer you boil, the stronger the chai.
   4. Strain into teacups to serve.


Optional :
 
    * Let the remaining solids cool and sprinkle them on your plants for an excellent fertiliser.
    * Tea masala or garam masala from a store can be used to get around the masala mixture
       process, however pre ground spices lose their flavor over time.
    * In step one, boil the water and milk separately, and in step two add the tea leaves and masala to
       the boiling water, boiling until the tea is as strong as you like. Only then add the milk to the mix.
       This can speed up the process without effecting the flavor. This method is often used by
        restaurants to serve chai in large quantities quickly as orders are taken.
    * Optionally turn off the heat in the end, cover and let sit for about five minutes for a richer flavor.
    * Try adjusting the ratio of milk to water. For a richer milky tea, try two parts milk to one part 
        water.
    * Leave out the sugar for a more adult flavor. Sugar can be added while drinking if so desired.
    * Try other combinations of South Asian spices. Each region in which chai is commonly available
        has its own popular or traditional spice mix. One common addition is cumin seed, though some
         may not like the strong distinct fragrance.
