Tried this new oats orange and walnut cake, it came out well and tasted great! Thanks to Kanmani sis, I got the recipe from her. Just modified to add walnuts 😍 Try it for yourselves and enjoy this healthy spongy cake
Ingredients
Carrot - 1 finely grated
Orange - 1 cup juice
Orange Zest - 2-3 orange
Walnut - 1/2 cup chopped
Powdered oats - 1 cup
Wheat flour - 1 cup ( you can take APF 1 cup or 50/50 APF + Wheat flour)
Baking powder - 1 tbsp
Cinnamon powder - 1 tbsp
Jaggery - 2 tbsp
Condensed milk - 1 cup
Neutral oil - 1/2 cup
Vanilla essence
Pinch of salt
PS:
1. I didn't add sugar and added less Jaggery since I wanted the orange taste. If you want more sweet taste to the cake add 1 cup of powdered sugar or Jaggery
2. I have skipped curd from Kanmani sis recipe, instead I have added condensed milk
Steps
1. To the condensed milk add orange juice, zest, grated carrot, oil. Blend and mix it well
2. Add cinnamon powder, baking powder, Wheat flour, salt and mix it well
3. Add the chopped walnut and mix it well
4. Add the Jaggery to the mixute and blend it well
5. Grease the baking tray
6. Bake for 30 minutes at 180°c in a pre heated oven
